Green onions are highly perishable vegetables with a very limited postharvest life. Their high surface area to volume ratio makes them extremely susceptible to rapid moisture loss, leading to wilting and loss of crispness. Additional challenges include yellowing of the green tops, curvature, telescopic growth (where inner leaves extend beyond outer leaves), and microbial decay, particularly at the white base and root area.
